Selma's Luxurious Apple Cake
3 - 4 Large Granny Smith Apples

Marinade
3T Dark Rum
1/2 c Raisins
1 T Cinnamon

Dough
1 c Unsalted Butter - room temperature
3/4 c Sugar
3 Eggs
1 1/4 c Flour
1 t Baking Powder

Garnish
1/4 c Sliced Almonds
Preheat oven 350 F
Butter and flour a loose bottom, 9 inch round pan.
Blend rum, raisins and cinnamon in a large bowl.
Peel apples,  slice and core with Ludwig Apple Slicer Corer.
Add apples to the marinade and stir to cover.
Beat butter and sugar until they turn pale.
Add eggs, one at a time, beat until creamy.
Add flour and baking powder and blend well.
Spread out half the dough into the pan.
Lay marinated apples on top in an attractive pattern.
Cover with remaining dough and sprinkle with almonds.
Bake until cake pulls away from pan, about 30 - 40 minutes.

Selma's cake is best served luke warm with whipped cream or vanilla sauce, but it is still wonderful
cold and plain.
