Chunky Apple Cake
1/4 cup chopped hazelnut
1 1/4 cup brown sugar
1/2 cup sugar
1 cup corn oil
1 cup flour
1/2 cup Graham or All Purpose
1 t. baking powder
1 t. baking soda
1 t. cinnamon
pinch of salt
1/2 cup pine nuts
1 T. sugar
Preheat oven to 350 F
Beat brown sugar and white sugar together with oil until light in color.
Add eggs one at a time and beat together.
Beat in flours, baking powder, baking soda, cinnamon, and salt.
Do not peel apples.
Slice and Core apples with Ludwig Apple Slicer Corer.
Cut into chunks and add to dough with hazelnuts.
Mix together until well blended and pour into buttered baking form.
Sprinkle with pine nuts and sugar.
Bake until cake pulls away from side of pan, about one hour.
(Cake can made the day before and seems to get juicier the older it gets)
