Apple Cake with Honey & Roasted Pine Nuts
Crust
1 c Crushed Graham Cracker or other plain cookies
1/2 c Flour
1/2 c Unsalted Butter- melted
2 T Sugar
Lemon Rind

Filling
2 - 3 Baking Apples i.e. Granny Smith
1 T Butter - melted
1/4 c Runny Honey
1/4 c Pine Nuts
Preheat oven at 350 F
Blend ingredients for the crust.
Push dough into buttered and floured, loose bottom, 9 inch round pan.
Try to get some of the dough to go up the side of the pan.
Place pan into the freezer for 15 minutes, then into the oven for about 5 minutes.
Peel apples, then slice and core with Ludwig's Slicer Corer.
Cut each section into thin slices.
Lay them on top of the crust in an attractive pattern.
Paint them with the melted butter.
Spread the honey over and sprinkle with pine nuts.
Bake for about 30 minutes or until the pine nuts take on color.
Spritz with whipped cream.
Serve warm or cold.
